Eggplant Casserole


I made one of my favorite meals tonight - eggplant casserole. Eggplant is one of those foods that are really good for you, but the taste of it, by itself, well, you know!!!
Here is the recipe:
1 medium eggplant, peeled and cubed
1 1/2 pounds ground beef
1 medium onion, chopped
1 medium green bell pepper, chopped
3 medium tomatoes, chopped
salt and pepper to taste
1/2 cup milk
1 egg, beaten
1/2 cup dry bread crumbs
2 tablespoons butter, melted
In a saucepan, bring water to boil. Add cubed eggplant. Boil for 5 or 6 minutes or until the eggplant is tender; drain and set aside.
In a large skillet, cook ground beef, onion and pepper until the meat is no long pink; drain. Add the tomatoes and salt and pepper. Cook and stir for 5 minutes. Remove skillet from heat. Stir in combined milk and beaten egg; mix well.
Transfer to a greased oblong baking dish. Toss bread crumbs with melted butter and spread over the mixture in the baking dish. Bake, uncovered, at 375 degrees for 30 minutes.
