These are really good and another way to get veggies in your diet.
1 cup Bisquick
1/2 cup finely chopped onion
1/2 cup grated Parmesan
2 tablespoons chopped parsley
1/2 teaspoon salt
1/2 teaspoon salt
1/2 teaspoon oregano
1/4 teaspoon pepper
1/2 teaspoon garlic powder
1/4 cup vegetable oil
4 eggs, beaten
3 cups grated zucchini
Combine all ingredients except zucchini. Stir in zucchini and spread evenly in lightly greased 13 x 9 x 2 pan. Bake at 350 for 30 minutes. Makes 24 two inch squares.
