Apple Broccoli Salad

I found this one recently and really like it.  It is full of nutrition and good taste.


4 cups fresh broccoli florets, chopped

1 small red onion, chopped

2 large carrots, grated

1 stalk celery, chopped

1 apple, unpeeled and chopped

1 cup fresh cranberries

1 tablespoon olive oil


Dressing:

1 cup plain yogurt (I used Greek yogurt)

3 tablespoons honey

3 tablespoons apple cider vinegar

1 tablespoon lemon juice

1 teaspoon fresh garlic

salt and pepper to taste

Combine the salad ingredients.  Then combine the dressing ingredients and mix well with the salad.


Delicious!
